As noted by the person above me, most people go for the Iberian Wedding route instead of the conquest route as it is typically easier and much nicer to deal with. I decided it would be easiest to just take the three provinces I need from Aragon to assemble Spain, but I can't do that because I think Valencia is there capital province, which is why I thought annexing would work. Or you can hope the Iberian Wedding happens and you get a PU over both Aragon and Naples. You can continue warring Aragon in this way until they are cheap enough to full annex and you can get the Naples PU also. I'd say try to get enough warscore to take 2 or 3 of their mainland provinces, or if you feel like you can handle the overextension and core costs you could take more. However you should be wary about taking too many provinces in the peace because coring a lot of their land will be expensive on your admin points. You will get more warscore if you do this though and can thus take more out of the peace deal. But you should know that you won't be able to full annex them even if you do siege all of their provinces, because they are simply too large.
